Dinner 2: Corn Chowder and Bagel Turkey, Bacon, Avocado Sammiches


2 Tbs of olive oil
1 large carrot
1 stalk of celery, diced
1/2 of white onion, diced
2 cloves garlic, minced
3 strips of bacon, cut
1 tsp Thyme
1 tsp Rosemary
salt and pepper to taste
1/2 cup of flour
1 cup of water
1.5 cups of milk
1 tsp chicken base
2 red potatoes, chopped
2 cups sweet white corn

In a pot, heat 2 Tbs of olive oil. Add the onion, celery, carrot, garlic, bacon, Thyme and Rosemary. Season with salt and pepper. Saute until the bacon is crispy. Add the flour and stir until it's crumbly. Add the water until mixture is smooth and creamy. Add the milk and the chicken base and stir till base is dissolved. Add the potatoes and corn, and bring to a simmer, stirring constantly to prevent scalding. Once potatoes are tender, take soup off heat. Serve and enjoy!


How to get the best sandwich meat: Go to the deli at your favorite store, and find your favorite type of meat. Tell them how much you want and they'll slice it for you. 

I love avocados...to be honest, I'm pretty much living off of them. I fry the bacon in the oven because it's the fastest, easiest way to do it.
